Amritsari Macchi (fish)

This dish consists of fish fillets wrapped up in crispy batter and deep fried.

Ingredients
8 pieces         Fish fillet        (Cod, Sole, Colley)
½ cup             Gram flour (besan) 
4-6 cloves      Garlic (lahsan) (make into a paste)          
1½ inch          Ginger (adrakh) (make into a paste)        
¼ tsp              Carom seeds (ajwain)        
1 tsp                Red chili powder (lal mirch)
2 tsp                Garam Masala         
2 tbsp             Lemon juice (nimboo ka ras)         
1                      Egg (anda)   
3-4 tbsp          Curd (dahi)   
Salt to taste
Vegetable oil for frying

Instructions
1.    Clean, wash and cut fish into desired shape.

2.    Apply salt, lime juice, ginger paste, garlic paste, garam masala and red chilli powder and keep aside for 30 minutes.

3.    Mix gram flour, curd, egg, carom, salt in a bowl and make a smooth batter using little water.

4.    Keep marinated fish pieces dipped in this batter for 15 minutes.

5.    Deep fry in oil until crisp, golden brown and drain the excess oil on absorbent paper.

6.    Sprinkle some chat masala on the crispy golden fish and serve hot with sliced lemon (lime), mint yoghurt chutney and garnish with a sprig of coriander.
